No-Bake Berry Cheesecake

We pick berries every summer, and cooking with them gives me such a feeling of peace and thankfulness for the beauty and provisions of God's creation. This also happens to be one of Rev. Matt's favourite desserts.

Ingredients
  

  • 1/4 cup butter
  • 2 cups graham crumbs
  • 1 package cream cheese
  • 1 cup sugar
  • 1 pkg dream whip (2 pkg for deeper pie)
  • 2 tsp lemon juice
  • Berries (e.g.blueberries or Saskatoons)
  • 2 tbsp corn starch

Instructions
 

  • Melt butter
  • Mix in Graham Crumbs
  • Press mix into pie dish and refrigerate
  • Whip Dream Whip until peaks form
  • Whip Cream Cheese with 1 cup sugar
  • Add Lemon Juice and mix
  • Combine the Dream Whip and Cream Cheese mixtures and mix thoroughly
  • Spread on top of crumb mix
  • Simmer half berries in a cup of water and thicken with corn starch
  • Remove from heat and add rest of berries
  • When completely cold, add berries to cheesecake.
  • Refrigerate
