  • 1/2 tsp salt
  • 1/2 cup lard or other shortening
  • 3/4 cup cold water (approx.)
  • 1 egg, beaten - for basting

Instructions

Meat Filling

  • Brown meat then add onion and garlic, cooking until soft.
  • Add the rest of the seasonings and herbs and cook for about 5 minutes more and then take off heat to cool slightly.
  • While the meat is cooking, prepare the dough.

Dough

  • Mix flour and ½ tsp of salt in a large mixing bowl, then work in the shortening with hands until crumbly.
  • Slowly add ½ to ¾ cold water until a soft dough forms.
  • Roll out dough into a large, thin circle, then cut out patties about 6” in diameter (can use an upturned bowl about 6” in diameter or large cookie cutter about that size).

Put it all together

  • Put approximately 3 tsps of meat filling into the centre of the patty circles and fold over like a perogy, crimping ends with a fork or pastry crimper.
  • Brush top of patty with egg wash and place on a cookie sheet lined with parchment paper.
  • Cook in a preheated 375 F oven until golden brown, approximately 25 minutes (check after 20 minutes).
  • Cool on a cooling rack.
