Deluxe Shepherd's Pie

Ingredients
  

  • 10 cups potatoes, chopped & salted to taste
  • ½ cup milk
  • 1 cup TexMex shredded cheese
  • 1 kg ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, chopped or minced fine
  • 1 tsp celery salt
  • 1 tsp paprika
  • 1 bag (350-400 gr) frozen corn, thawed and drained
  • 8 oz. can sliced mushrooms, chopped and drained
  • ½ tsp dried thyme
  • ¼ tsp dried marjoram or oregan
  • ¼ cup finely chopped fresh parsley, stems removed
  • 1 tbsp fresh basil, chopped
  • 3 tbsp flour or cornstarch
  • 1 pkg beef gravy mix
  • 1 ½ cups beef stock
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • ½ tsp pepper

Instructions
 

  • Boil potatoes until soft. Add tbsp. butter and 1/2 - 3/4 cups milk and mash. Mix in Tex Mex cheese.
  • While potatoes are boiling, add some oil to a large frying pan. Cook the beef, onions, garlic, mushrooms and spices for 5 minutes or until done. Drain.
  • Sprinkle with flour and gravy mix and mix well.
  • Add the beef stock and mix well.
  • Add the tomato paste, Worcestershire sauce and corn and mix well.
  • Simmer for 5 - 8 minutes.
  • Spread in a large casserole dish, sprayed with Pam.
  • Top with mashed potatoes sprinkled with extra cheese if desired.
  • Bake 20-30 min. at 350 F.
