Chocolate Almond Fancies

Ingredients
  

  • 1/2 cup soft butter
  • 1/4 cup sugar
  • 3 tbsp Cocoa
  • 1 egg
  • 1/2 tsp vanilla
  • 1/2 tsp salt
  • 2 cups graham wafer crumbs
  • 1 cup flaked coconut
  • 1/2 cup chopped toasted almonds

Filling

  • 2 cups icing sugar
  • 1 tbsp melted butter
  • 2 tbsp cream
  • 1-3 drops almond extract

Topping

  • 1 square semi-sweet chocolate or use chocolate chips
  • 1 tbsp butter

Instructions
 

Base

  • Combine butter, sugar, cocoa, egg, vanilla and salt in microwave dish. Stir to blend well.
  • Cover and cook in microwave on medium power for 1 minute at a time (stir after each minute) until thickened.
  • Blend in graham wafer crumbs, coconut and almonds.
  • Press firmly into a buttered or sprayed 8 x 8" pan. Chill.

Filling

  • Mix together blending well. Spread over cooled base.

Topping

  • Melt chocolate and butter together in microwave on low power. Spread over filling.
