Cherry Cheescake

Ingredients
  

Crust:

  • 2 ½ cups wafer crumbs
  • ¼ cup brown sugar
  • ½ cup butter or margarine

Filling:

  • 1 large pkg. cream cheese
  • 1 can sweetened condensed milk
  • 1/3 cup lemon juice
  • 1 tsp vanilla
  • 1 can cherry pie filling

Instructions
 

  • Preheat oven to 375 degrees F.

Crust:

  • In a small bowl, blend together wafer crumbs & brown sugar.
  • Mix in melted butter or margarine.
  • Press crumb mixture into sides & bottom of a 9” springform cake pan or a 9” pie plate.
  • Bake for 8-10 minutes at 375 degrees F.
  • Remove from oven & cool.

Filling:

  • In a large mixing bowl, beat softened cream cheese until light & fluffy. Gradually stir in sweetened condensed milk until thoroughly blended. Stir in lemon juice & vanilla.
  • Spread over cooled crust & refrigerate for 2-3 hours.
  • Garnish top of pie with cherry pie filling.
