The baking process is most certainly therapeutic to my physical body as well as spiritual soul. These fist-size delicious muffins makes me realize how lucky I am to have everything I need to feed my occasional craving. Too often, however, we are taking granted for things that are already surrounding us. For this reason, I am grateful for everything that God has given to me. I wish whoever replicates this recipe has the same takeaway.Note: recipe credit goes to Kendra Friesen, a baking wizard, my roommate.

Ingredients
1/2cupmargarine softened
1tspvanilla
3/4cupsugar
2eggs
1cupmashed bananas (3-4 bananas) the riper, the better; frozen bananas create a moist texture
2cupsflour. For healthier version, use 1 cup of regular flour and 1 cup of whole wheat flour
1tspsalt
1tspbaking soda
3/4cupchocolate chips. If using white chocolate chips, you might want to reduce the amount of sugar as usually white chocolate is sweeter in taste than dark chocolate
Instructions
Cream margarine, then add vanilla, sugar and eggs, mix them well together in a large bowl
Add mashed banana into the above batter
Add flour, salt, baking soda, chocolate chips
Bake at 350 degrees for 15-20 minutes
Notes
I would avoid over-mixing ingredients as you may end up with dense and dry texture of muffins. Can add walnuts or other nuts.
