Tuna Casserole

- 1 cup panko crumbs
- ¼ cup grated parmesan cheese
- 2-3 tbsp olive oil
- 12 oz egg noodles
- 3 tbsp butter
- ½ onion, diced
- 3 cloves garlic, minced
- 2 -3 tbsp flour
- 2 cups chicken broth
- 1 cup milk
- 2 cups frozen peas
- 2 cans tuna (6 oz)
- 2 cups shredded cheddar
Instructions
- Preheat oven to 400 F
- In a small bowl, use a fork to mix together the crumbs, parmesan and oil. Set aside
- Lightly grease a 9 x 13 pan
- Cook noodles and place in baking dish.
- Melt butter in a medium sauce pan. Add the onion and saute 5 - 7 minutes
- Stir in garlic and flour for 1 minute
- Slowly pour in the broth and milk and simmer, stirring constantly until thickened.
- Stir in the peas and tuna. Pour over pasta . Add in the cheese and toss to coat.
- Sprinkle with panko crumb mixture.
- Bake, uncovered, 15-30 min. until topping is lightly browned.
