    Course Misc (e.g., hollandaise sauce, café latte)
    Servings 10 squares or 16 triangles

    Ingredients
      

    • 2 cup flour
    • 3 tsp baking powder
    • 1/2 tsp salt
    • 2 tbsp white sugar
    • 1/4 cup butter or shortening
    • 2 eggs
    • 1/3 cup milk

    Topping :

    • 2 tbsp white sugar

    Instructions
     

    • Preheat oven to 450F. Stir flour, baking powder, salt, and sugar together.
    • Cut in butter with pastry blender or 2 knives until mixture has the consistency of course cornmeal.
    • Beat eggs until light, (reserving 2 tsp. to brush over top of scones)
    • Stir in milk.
    • In the dry ingredients make a well in the centre, add liquid slowly to make a soft dough.
    • When all liquid has been added, stir dough rather vigorously until it comes freely from the side of bowl.
    • Pat to 3/4" thickness, cut in squares or triangles.
    • Brush over with egg & sprinkle with sugar.
    • Bake on a well greased cookie sheet in oven for 12-15 minutes. These scones may brown quickly on bottom.

    VARIATIONS:

    • Raisin - stir in 1/2 cup or raisins or currants with dry ingredients.Cheese - increase salt to 1 tsp. If using shortening, decrease sugar to 1 tsp. Cut in 1/2 cup of shredded cheddar cheese with butter or shortening.
