Nigerian Pancake

- 1 cup flour
- 2 eggs
- 1/2 cup evaporated milk
- 2 tbsp margarine
- 1/2 cup water
- 1/4 tsp salt
- 6 tsp sugar (or to taste)
- ground chili powder (to taste)
- vegetable oil for frying
Instructions
- Heat margarine in microwave until melted. Let cool slightly.
- Beat the eggs in a medium sized bowl and add margarine, beating well.
- Add 1/2 cup of water and beat until smooth.
- Add the rest of the ingredients and mix well.
- In a heated pan brushed with vegetable oil, fry the underside of the pancake, shaking the pan from time to time until the pancake comes loose. (You can also use a spatula). Check the underside to see if it is browned to your liking, then flip and fry the topside as well. Makes a great snack!
