    Servings 6 pancakes

    Ingredients

    • 1 cup flour
    • 2 eggs
    • 1/2 cup evaporated milk
    • 2 tbsp margarine
    • 1/2 cup water
    • 1/4 tsp salt
    • 6 tsp sugar (or to taste)
    • ground chili powder (to taste)
    • vegetable oil for frying

    Instructions

    • Heat margarine in microwave until melted. Let cool slightly.
    • Beat the eggs in a medium sized bowl and add margarine, beating well.
    • Add 1/2 cup of water and beat until smooth.
    • Add the rest of the ingredients and mix well.
    • In a heated pan brushed with vegetable oil, fry the underside of the pancake, shaking the pan from time to time until the pancake comes loose. (You can also use a spatula). Check the underside to see if it is browned to your liking, then flip and fry the topside as well. Makes a great snack!
