    Lazy Cabbage Rolls

    Ingredients
      

    • 6 slices bacon, courses chopped
    • 1 medium onion , minced
    • 3.5 cups sauerkraut (I prefer to add a bit more) - drained but not rinsed
    • 3.5 - 4 cups day old or cold cooked rice
    • 1/3 cup cooked ground beef (optional but much better with)
    • 3/4 tsp salt
    • 1/2 tsp pepper

    Instructions
     

    • Cook bacon until crisp, about 6-8 minutes. Transfer to paper towel lined plate. Pour off all but 2-3 tbsp bacon grease.
    • Over medium heat, cook onion in remaining bacon grease until soft, about 5 mins. Add sauerkraut & cook until heated through - about 5 minutes, stirring often. Stir in rice, ground beef if using, salt and pepper. Cook until rice is heated, about another 5 minutes, stirring often. Finally add the bacon.
