Slow Cooker Scalloped Potatoes

- 4 lbs large potatoes, peeled & thinly sliced
- 1 medium onion, peeled & thinly sliced
- 4 tbsp butter or margarine
- 1/4 cup flour
- 1 tbsp flour
- 1 tsp salt
- 1/4 tsp pepper
- 2 cups milk
- 2 tbsp heavy whipping cream
Instructions
- Spray slow cooker with cooking spray.
- Add potatoes and onions to slow cooker in layers.
- In large pot combine butter, flour, salt and pepper. Over medium-low heat, stir until butter is melted.
- Gradually whisk in milk and cream until no lumps remain, cook until bubbly and thickened, about 10 minutes.
- Pour sauce over potato & onion layers. Cover and cook for 4 hours on high or 5 - 7 hours on low.
