Guyanese Beef Patties

Ingredients
Meat Filling
- 1 1/2 lbs ground beef
- 3 cloves garlic - crushed or finely chopped
- 1 onion - finely chopped
- 1 small tomato - chopped
- Herbs for seasoning - finely chopped and fresh if possible
- Basil
- Oregano
- Thyme
- Celery tops or parsley
- Salt and pepper to taste
- 1 1/1 - 2 tbsp curry powder (optional) to taste. preferably West Indian curry powder which is milder than East Indian curry powder
- Chili flakes (optional) sprinkle
Dough
- 2 cups flour
- 1/2 tsp salt
- 1/2 cup lard or other shortening
- 3/4 cup cold water (approx.)
- 1 egg, beaten - for basting
Instructions
Meat Filling
- Brown meat then add onion and garlic, cooking until soft.
- Add the rest of the seasonings and herbs and cook for about 5 minutes more and then take off heat to cool slightly.
- While the meat is cooking, prepare the dough.
Dough
- Mix flour and ½ tsp of salt in a large mixing bowl, then work in the shortening with hands until crumbly.
- Slowly add ½ to ¾ cold water until a soft dough forms.
- Roll out dough into a large, thin circle, then cut out patties about 6” in diameter (can use an upturned bowl about 6” in diameter or large cookie cutter about that size).
Put it all together
- Put approximately 3 tsps of meat filling into the centre of the patty circles and fold over like a perogy, crimping ends with a fork or pastry crimper.
- Brush top of patty with egg wash and place on a cookie sheet lined with parchment paper.
- Cook in a preheated 375 F oven until golden brown, approximately 25 minutes (check after 20 minutes).
- Cool on a cooling rack.
