French Canadian Tourtiere (2 Pork Pies)

- 2½ lbs Minced Pork
- 1 large onion (minced fine)
- 1 cup bread crumbs
- 2 tsp cinnamon
- 1½ tsp cloves
- ½ tsp ginger
- salt & pepper to taste
- water (about 1- 1½ cups per pound of meat; don’t put in too much)
Instructions
- Combine all ingredients and add enough water to cover. Stir to prevent burning. If not as thick as mashed potatoes, use a little flour to thicken.(NOTE: If you add flour, you may have to add additional spices in the proportions above so that the taste is not reduced).
- Use your favourite pie crust (not too rich) and proceed in the usual manner with upper and lower crusts.
- Cool filling before placing in uncooked pastry. Cook pastry until golden brown.Serve hot or cold.
