Cherry Cheescake

Crust:
- 2 ½ cups wafer crumbs
- ¼ cup brown sugar
- ½ cup butter or margarine
Filling:
- 1 large pkg. cream cheese
- 1 can sweetened condensed milk
- 1/3 cup lemon juice
- 1 tsp vanilla
- 1 can cherry pie filling
Instructions
- Preheat oven to 375 degrees F.
Crust:
- In a small bowl, blend together wafer crumbs & brown sugar.
- Mix in melted butter or margarine.
- Press crumb mixture into sides & bottom of a 9” springform cake pan or a 9” pie plate.
- Bake for 8-10 minutes at 375 degrees F.
- Remove from oven & cool.
Filling:
- In a large mixing bowl, beat softened cream cheese until light & fluffy. Gradually stir in sweetened condensed milk until thoroughly blended. Stir in lemon juice & vanilla.
- Spread over cooled crust & refrigerate for 2-3 hours.
- Garnish top of pie with cherry pie filling.
