Banana Chocolate Chip Muffins

These fist-size delicious muffins makes me realize how lucky I am to have everything I need to feed my occasional craving. Too often, however, we are taking granted for things that are already surrounding us. For this reason, I am grateful for everything that God has given to me. I wish whoever replicates this recipe has the same takeaway.Note: recipe credit goes to Kendra Friesen, a baking wizard, my roommate.
Ingredients
- 1/2 cup margarine softened
- 1 tsp vanilla
- 3/4 cup sugar
- 2 eggs
- 1 cup mashed bananas (3-4 bananas) the riper, the better; frozen bananas create a moist texture
- 2 cups flour. For healthier version, use 1 cup of regular flour and 1 cup of whole wheat flour
- 1 tsp salt
- 1 tsp baking soda
- 3/4 cup chocolate chips. If using white chocolate chips, you might want to reduce the amount of sugar as usually white chocolate is sweeter in taste than dark chocolate
Instructions
- Cream margarine, then add vanilla, sugar and eggs, mix them well together in a large bowl
- Add mashed banana into the above batter
- Add flour, salt, baking soda, chocolate chips
- Bake at 350 degrees for 15-20 minutes
Notes
I would avoid over-mixing ingredients as you may end up with dense and dry texture of muffins. Can add walnuts or other nuts.
