    The baking process is most certainly therapeutic to my physical body as well as spiritual soul. These fist-size delicious muffins makes me realize how lucky I am to have everything I need to feed my occasional craving. Too often, however, we are taking granted for things that are already surrounding us. For this reason, I am grateful for everything that God has given to me. I wish whoever replicates this recipe has the same takeaway.Note: recipe credit goes to Kendra Friesen, a baking wizard, my roommate.

    Servings 17 muffins

    Ingredients
      

    • 1/2 cup margarine softened
    • 1 tsp vanilla
    • 3/4 cup sugar
    • 2 eggs
    • 1 cup mashed bananas (3-4 bananas) the riper, the better; frozen bananas create a moist texture
    • 2 cups flour. For healthier version, use 1 cup of regular flour and 1 cup of whole wheat flour
    • 1 tsp salt
    • 1 tsp baking soda
    • 3/4 cup chocolate chips. If using white chocolate chips, you might want to reduce the amount of sugar as usually white chocolate is sweeter in taste than dark chocolate

    Instructions
     

    • Cream margarine, then add vanilla, sugar and eggs, mix them well together in a large bowl
    • Add mashed banana into the above batter
    • Add flour, salt, baking soda, chocolate chips
    • Bake at 350 degrees for 15-20 minutes

    Notes

    I would avoid over-mixing ingredients as you may end up with dense and dry texture of muffins. Can add walnuts or other nuts.
